This is a tremendously balanced and integrated whiskey that has nuanced richness and a surprisingly gentle alcohol under-structure for a barrel-strength bourbon. It’s something that can only be created over time. There is a long and lingering finish that provides a perfect end to a special whiskey. Wow!

OLD ELK Four Grain Bourbon     $17

IRISH

The word 'whiskey' (or whisky) comes from the Irish (or 'Gaelic') uisce beatha, meaning water of life. Irish whiskey was one of the earliest distilled drinks in Europe, arising around the 12th century. It is believed that Irish monks brought the technique of distilling perfumes back to Ireland from their travels to the Mediterranean countries around 1000 A.D. The Irish then modified this technique to obtain a drinkable spirit.

All Scotch whisky was originally made from malted barley. Commercial distilleries began introducing whisky made from wheat and rye in the late 18th century. Scotch whisky is divided into five distinct categories: single malt Scotch whisky, single grain Scotch whisky, blended malt Scotch whisky (formerly called "vatted malt" or "pure malt"), blended grain Scotch whisky, and blended Scotch whisky. Made from a variety of maguey or oven-smoked agave, this is a spirit that is claimed to best express the terroir of its region of origin by those that craft it. Common flavors are sweet, fruity, earthy and smoky.

RUM

Rum is a distilled alcoholic beverage made from sugarcane byproducts such as; molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels.

The majority of the world's rum production occurs in the Caribbean and Latin America. Rum is also produced in Scotland, Austria, Spain, Australia, New Zealand, Fiji, the Philippines, India, Reunion Island, Mauritius, South Africa, Taiwan, Thailand, Japan, the United States, and Canada.

BRANDY

Brandy is a spirit produced by distilling wine. Brandy generally contains 35–60% alcohol by volume (70–120 US proof) and is typically taken as an after-dinner drink. Some brandies are aged in wooden casks, some are colored with caramel coloring to imitate the effect of aging, and some brandies are produced using a combination of both aging and coloring. In broader sense, the term "brandy" also denotes liquors obtained from distillation of pomace (pomace brandy) or mash or wine of any other fruit (fruit brandy). These products are also named eau-de-vie. Varieties of wine brandy can be found across the winemaking world. Among the most renowned are Cognac and Armagnac from Southwestern France.

HERBAL LIQUEURS

“Inhabitants of Europe's mountainous regions have made liqueurs with local flowers and plants for centuries. These include the fragrant, floral crème de violette as well as herbaceous and bitter liqueurs that started out as elixirs to aid indigestion and other ailments. The latter category includes amaro, meaning "bitter," in Italian. While they began as wine-based digestive aids, most modern amari are composed of spirits (usually neutral spirits), a proprietary mix of herbs and botanicals, and sugar or other natural sweetener. Always appropriate neat or with coffee after a meal, floral, herbal and amaro liqueurs also enliven many contemporary and classic cocktails.” - HAUS ALPENZ

  • Duplais Swiss Absinthe Blanche - 120 proof - Italy. Completely crystal clear with pewter reflections. Warm, yet complexly herbal nose with hints of mentholated wormwood, ground coriander and candied angelica root. When louched with cold water, it produces a cloud-white opalescence in the glass, tinged with pewter. Full mouth-feel, silky, yet subdued, it tastes of a complex and heady blend of aromatic medicinal herbs with a lingering anis-bright sweetness that coats and caresses the tongue.

  • Vieux Pontarlier – 130 proof – France.  Pale peridot green. Slowing dripping ice-cold water produces a lightly green-tinged and billowy opalescent cloudiness. The aroma is fresh, yet slightly briny and spicy with lightly mentholated and cacao notes. The flavors are multi-layered, the grape spirit provides a complex base for subtle herbal undertones, the anise and fennel seed are sweet yet, well balanced, highlighting the minty/menthol taste of true Pontarlier wormwood.
